Choose the comforting Soup version with rich bone broth, or the more intense Dry Tossed style where the savory-sour sauce clings directly to each strand. Both are topped with your choice of protein and fresh baby bok choy.

A light yet deeply satisfying noodle soup that sings with bright, tangy, and savory harmonies. Silky-smooth mung bean noodles swim in a rich bone broth, topped with a stir-fry of uniquely crisp and sour Shuǎngkǒu pickles and tender slices of protein. The subtle sweetness in the broth perfectly balances the pickle's sharpness, while blanched baby bok choy adds a fresh, clean finish. It’s comforting, refreshing, and utterly moreish.

Heating Instructions

For the SOUP Version:

You Receive: A bowl with noodles, toppings, and broth already combined (soup poured in).

Microwave Method:

  1. Vent. If your bowl has a lid, leave one corner open to allow steam to escape. If no lid, cover loosely with a damp paper towel.

  2. Stir First. Before heating, use a fork or chopsticks to gently separate the noodles and stir the contents. This breaks up clumps and distributes the broth, ensuring even heating.

  3. Heat. Microwave on HIGH for 2 minutes to 3 minutes, depending on your microwave's power.

  4. Check & Finish. Carefully remove (bowl will be very hot). Stir thoroughly to distribute heat. Ensure the soup is steaming hot in the center. If needed, return to microwave in 30-second increments.

  5. Let Rest. Let it stand for 1 minute before eating (this allows heat to equalize and finishes cooking the noodles gently).

For Dry Tossed Version

You Receive: A bowl with noodles, bok choy, and the seasoned sour-pickle & meat topping together.

Microwave Method:

  1. Sprinkle with Fine Mist: Using your fingers or a spray bottle, lightly dampen the surface of the noodles with water. This creates a steamy environment without making the dish wet.

  2. Cover & Heat: Cover the bowl loosely with its lid (vented) or a damp paper towel. Microwave on HIGH for 2 to 2.5 minutes, or until steaming hot.

  3. Final Toss: Carefully remove the bowl (it will be hot). Toss everything thoroughly to redistribute the sauce and any condensed steam. This step is crucial to re-emulsify the oils and seasonings.

  4. Let Rest: Let it stand for 1 minute before eating to allow the heat to fully penetrate.
